Bread and butter. Peanut butter and jelly. Certain foods added together equal comfort and that is exactly what I had in mind for this post. Today the holidays are officially over as the kids returned to school and many of us went back to work from vacation. I woke up today feeling a little blue, as the holidays just flew by and I never had time to really relax and enjoy the moment. Like many of you, I will be getting back on track with diet and exercise, as tomorrow I start a two-month training program to get back in tip-top shape for my birthday on March 7th. With that being said, I was craving something sweet and salty and voila, a recipe popped up on one of my Pinterest boards for a grilled peanut butter and jelly sandwich. While I have had many PB&J sandwiches in my life, I can honestly say that I have never had one grilled.I decided to whip up a snack for my kids while they were doing their homework and also made one for myself. Simple and delicious, this sandwich made me forget about the after-holiday blues.
All you need is two slices of bread, peanut butter, jelly and a tablespoon of butter. Simply spread peanut butter one one slice of bread and then spread jelly over the other slice. Heat the butter in a skillet over medium high heat and place each slice, topping side up, into the warm butter bath. Grill until golden brown.
Using a spatula, flip one slice on top of the other to seal the sandwich.
Place on a cutting board and slice in half. Eat immediately with a cold glass of milk or beverage of choice.
My son does not like jelly and I had to beg him to try this tasty sandwich. Always being different, he took a bite from the wrong end and got peanut butter and jelly all over the floor. Since I always love to clean up a sticky mess (note the sarcasm), I could not get upset as he actually loved the sandwich. Nothing makes me happier than getting a picky eater to enjoy something they thought they hated.
