In just five days, the Seattle Seahawks and Denver Broncos will take center stage for America’s greatest game in Super Bowl XLVIII. Although neither of my teams made it to the big stage. I will be watching and of course, cooking up a storm. While I have never been to Denver, I have been to Seattle and was just there this past September for the International Food Blogger Conference. Four months later and I am still thinking about the mind blowing food that I enjoyed during my visit to the Emerald City. One of the highlights of my visit was Beecher’s Handmade Cheese at Pike Place Market.
Known as having the world’s best mac and cheese, Beecher’s has been wowing locals and visitors from around the world since 2003 with their artisan cheeses, sandwiches and scrumptious mac and cheese. All it takes is one bite and you will see why their signature dish was featured as one of Oprah’s Ultimate Favorite Things in 2010.

During my visit to Seattle, I must have gone to Beecher’s at least four times for their incredible mac and cheese. Made with penne pasta, spices and their one-year aged Flagship and Just Jack cheeses, it is quite possibly the best mac and cheese my taste buds have encountered.
Each creamy bite took me to another place as I was swept away by the flavors and scents of this legendary dish. Each day during my visit, I walked over from my hotel and ordered a small dish of this cheesy goodness. Want a bite?
Grilled cheese sandwiches are another favorite and Beecher’s sets the bar with their cafe menu of comfort classics. I tried their Dungeness Crab Grilled Sandwich made with their Flagship cheese, crab and remoulade. The smokey cheese paired with the Dungeness Crab was simply divine. Living in Florida, I have really missed the flavors of the Pacific Northwest and this sandwich was just what I needed.
With locations in Seattle and New York City, you can indulge your senses on both coasts. If you happen to be one of the lucky ones going to the Super Bowl and will be in New York, I highly recommend stopping by Beecher’s in the Flatiron District. There is nothing quite like warming up with a bowl of their hot mac and cheese.
