I have to give my son credit for today’s post. While I was browsing Pinterest one day, he spotted these BaNilla Sandwiches from the blog Baker’s Royale and begged me to make them. These adorable little sandwich cookies are made with a banana slice, two mini Nilla wafer cookies, a dollop of peanut butter and sprinkles.
My five-year old daughter and I made these this afternoon and it was a fun project for the two of us in the kitchen. She was so proud of her BaNilla Sandwiches that she wants to make a few dozen and bring them to share with her classmates. My son was doing his homework while we made these but made sure to enjoy them as an after school snack.
To make theses adorable bite-size treats, simply slice a banana into 1/2 inch slices and then spread a little peanut butter on two mini Nilla Wafers and then make a sandwich with the banana slice in between.
Once your mini BaNilla Sandwiches are assembled, dip the sides into any kind of sprinkles of your choice and voilà, you have cute little cookie sandwiches that almost look like macarons. You can get very creative with these and substitute peanut butter for Nutella or Biscoff and the sprinkles for crushed peanuts or even mini chocolate chips. These are ideal for children’s parties and your kids will love helping make these in the kitchen.Pin It
