I am not ready to leave my culinary tour of Arizona yet and just had to share my version of a prickly pear mule, which I affectionately call a “Kickin’ Cactus Mule” and was inspired by a recipe I found on Pinterest for an Arizona Mule. Recently I discovered Tanteo, which is a jalapeño infused tequila. When it comes to cocktails, I like it hot so I am always experimenting with spicy drinks and infusing different spirits with peppers. After tasting Tanteo, it was love at first sip and I have used it in a variety of cocktails such as spicy mango margaritas and Bloody Marias.
A few months ago, I participated in a cocktail competition in Tampa called Margarita Wars and my entry was a spicy peach margarita that was topped off with ginger beer. I fell in love with the combination of tequila and ginger beer and have been mixing them together ever since. While researching Arizona inspired cocktails, I found that many recipes incorporate prickly pear so I decided to create a spicy mule with Tanteo Tequila, prickly pear syrup, fresh lime juice and ginger beer. The result was a spicy yet sweet drink that can be enjoyed any time of the year.
Being that I am a bar manager, I am lucky to have all of these ingredients at my fingertips. I used Finest Call Prickly Pear Syrup and although it is tasty, I wish it had a darker color to make it really pop in a cocktail. Since this is served in a mule mug, the color doesn’t really matter.
If you have a mule mug, definitely use it, otherwise any type of high ball glass will work. I built most of this cocktail in a shaker, strained over an ice-filled mule mug and topped with ginger beer. You can tone down the spice by adding more of the prickly pear syrup. I always garnish my mules with candied ginger which can be found in the international section at the local market.

- 1.5 oz Tanteo Jalapeno Infused Tequila (or you can infuse your own)
- .5 oz Finest Call Prickly Pear Syrup
- .5 oz lime juice
- Barrits Ginger Beer
- 1. In a shaker filled with ice, add tequila, prickly pear syrup and lime juice.
- 2. Shake and strain into a mule mug filled with ice.
- 3. Top with ginger beer and garnish with candied ginger, a lime wheel and a jalapeno slice (optional)
