I do not know about you, but I am ready for the spring. Living in Tampa, we have incredible weather throughout the year. In fact, for both Christmas and New Year’s Day, it was in the 80’s. This may sound crazy, but I prefer colder weather in the winter and warmer weather in the spring. No matter how hard I try, I just can’t get used to hot weather in the winter. It must be the Northern California girl in me. Ever since I was young, spring has always been my favorite season. It symbolizes new beginnings, gorgeous weather and my favorite produce always seems to be everywhere. Today I am sharing a cocktail that represents my favorite flavors of spring and lucky for me, this can be enjoyed all year round in Florida.
I received a few sample bottles of Stirrings cocktail mixers and drink rimmers so that I could participate in their blogger recipe contest. While it would be nice to win, I think I am more excited about sharing some fun recipe ideas with you. For as long as I can remember, I have been a fan of their products and have used them on many occasions. I have a few cocktails to share with you (more coming on the blog) and this is, by far, the one I most adore. Made with their Peach Bellini, it is a refreshing blend of my favorite flavors such as fresh basil, juicy peaches and sparkling wine. Ideal for brunch or an afternoon of celebration, this cocktail is sure to bring happiness to your palate.
My love affair with the Bellini began many, many years ago. I was about 22 years old and met a friend for Sunday brunch at a quaint spot in Los Altos, CA. She ordered us each a Bellini and my life has never been the same since. Over the years, I have served this classic for Christmas, Easter and New Year’s Day brunch and it is my beverage of choice on Mother’s Day. For this recipe, I gave the Peach Bellini a twist by adding vodka, fresh basil and peaches. This first time I made a variation of this was back in 2001 when I was hosting a friend’s birthday brunch back home in California. I used raspberry vodka, peach puree and topped it with sparking wine over ice. It was a winner with my party guests and I hope you enjoy this version made with basil.

- 1 oz of vodka (I prefer Tito's)
- 1.5 oz Stirrings Peach Bellini
- 6 oz sparkling wine or Prosecco
- fresh peach slices
- fresh basil leaves
- In a stemless wine or old fashioned glass, fill with ice.
- Add vodka and Stirrings Peach Bellini.
- Add 2-3 peach slices and then top with sparking wine or Prosecco.
- Add fresh basil leaves for a garnish.
- You can use a flavored vodka if you prefer, such as raspberry or lemon.
