I have had a cheese crush on Beehive Cheese Co. for about 7 years now. It all began when I met my two dear friends, Robert and his wife Jen, at Cru Cellars in South Tampa. It was a Friday night and I was in need of a night filled with wine and conversation. As we were deciding on cheeses to pair with our wines, I spotted a unique selection from Utah which caught my eye. It was called “Barely Buzzed” from Beehive Cheese Co. in Utah and was described as an espresso and lavender hand-rubbed cheese with hints of butterscotch and caramel. My heart began to flutter and all three of us agreed that we had to try that cheese. Needless to say, it is still one of my favorite cheeses seven years later and I love introducing my friends to it.
Located in Uintah, Utah, Beehive Cheese Co. just happens to be very close to my dad’s house. Lucky for him, he is able to visit on a regular basis.
Last week I flew to Salt Lake City to attend the Everything Food Conference and since I have a lot of family in the area, I made a list of places I wanted to visit. Beehive Cheese was at the top of my list and I felt like a little girl on Christmas Eve as my dad and I pulled into the parking lot.
Located in the town of Uintah, Beehive Cheese Co., is a cute little shop that showcases all of their award winning cheeses. I wanted to buy one of everything, but since it would be very hard to take a bunch of cheese back to Florida, I decided to pick up a few things to enjoy at my dad’s house.
I was in such a state of euphoria while perusing through all of their cheese selections. Of course, I had to take home a t-shirt along with a few other items.
We took home my favorite, Barely Buzzed, along with their Apple Walnut Smoked, which is now a new favorite. Cold-smoked in small batches using local Utah walnut wood and slices of red apple, this cheese has a subtle sweet and nutty flavor and finishes with a hint of smoke. I enjoyed it with wine later that day and reflected on how blessed I was to have been able to visit Beehive Cheese Co.
Whether you live in Utah or not, you can enjoy incredible cheeses from Beehive. In Florida, I am able to purchase their cheeses at several cheese shops and grocery stores. You can also purchase from them directly at their online shop.
