Happy Sunday! There is one thing that I look forward to every year around the holidays and crave throughout the month of December…….pizzelle! These delicious Italian waffle cookies originate from the Abruzzo region in Italy and I have been making them since I was a young girl. My great-grandmother was from Abruzzo, so I guess making these cookies is in my blood.

I have to give my son credit for today’s post. While I was browsing Pinterest one day, he spotted these BaNilla Sandwiches from the blog Baker’s Royale and begged me to make them. These adorable little sandwich cookies are made with a banana slice, two mini Nilla wafer cookies, a dollop of peanut butter and sprinkles.
