While browsing Pinterest for some easy recipes that my kids could experiment with, I came across a pin for Three Ingredient Peanut Butter Cookies by Frugal Antics of a Harried Homemaker. Not only did I find a delicious recipe that rocked my world, I found a new food blog filled with great stuff. Made with only a cup of peanut butter, a cup of sugar and an egg, these cookies are great for whipping up a sweet treat in 15 minutes. I could not stop eating them and neither will you.
Gather your three ingredients. All you need is an egg, a cup of sugar and a cup of your favorite peanut butter. I am obsessed with Peanut Butter & Co. and used one of my favorites, The Bee’s Knees, which is blended with honey.
Mix your ingredients in a bowl by hand and be sure that everything is well mixed.
Form the mixture into balls and pre-heat oven to 350. Bake for about 11 minutes.
Remove cookies from the oven to make them pretty, press down on them with a fork.
Let them cool on a wire rack and enjoy! With Valentines Day around the corner, these would make a sweet gift!

- Once mixture is nice and combines, roll into small balls and place on a greased cookie sheet.
