Sometimes I get exhausted just thinking about everything I do in one day and wonder how I manage without collapsing. As a single mom of two with a puppy and what seems like 3 jobs, I am often overextended. As much as I try, I often find it hard to sit down and eat since I seem to be always driving around from one place to another. Healthy snacking is important to me, especially while trying to always keep something on hand when hunger strikes.
Nuts are my go-to snack for many reasons. 1. They are waistline friendly. 2. My kids love them, especially almonds. 3. They are high in protein. 4. Many varieties come in convenient snack packs that I can place strategically in places such as my glove box, computer bag, desk drawer and purse. 5. I can create my own healthy trail mixes with dried fruits. 6. They satisfy my hunger when I have the urge to reach for something unhealthy. This site, which has become like my healthy snack bible, is loaded with recipes, healthy tips and products you can order. Their Healthy Snacks section showcases some fantastic recipes and health tips to keep you on track with fitness goals. As you can see in the photo below, my kids and I enjoy healthy handfuls of almonds at the dog park while trying to keep up with our energetic puppy, Vinny.
Pistachios are my personal favorite. Not only are they rich in antioxidants, they aid in digestion and weight management, increase iron absorption in the body and quite frankly, they taste amazing. Now, truth be told, I am obsessed with pistachio gelato and pistachio doughnuts, but if I were to indulge in those as much as I would want to, I would gain about 40 lbs. To satisfy my cravings, I enjoy pistachios in their natural state by cracking them open right out of their shell.
Mixing up my own healthy mix keeps me on track with my fitness goals and prevents boredom. I love to incorporate seasonal flavors such as pumpkin seeds and dried cranberries, depending what I have on hand. One of my favorites mixes that I am able to throw together at work (I am so lucky to work at a restaurant) is shown below. It contains walnuts, pistachios, almonds and dried cranberries. I swear by this mix as it prevents me from nibbling on unhealthy foods like potato chips and french fries. I call this Tracy’s Trail Mix.
