Happy Easter Weekend! Food is definitely in my forecast and I will be cooking up a storm on Sunday. While I am still finalizing our Easter menu, I came across a recipe for Arkansas Green Beans and tested it out yesterday. Easy, delicious and sure to be a crowd pleaser, these savory green beans are a nice addition to a big family meal. My kids loved this recipe and we enjoyed them last night with dinner.
While I was unable to trace the origin of the recipe, I assume that they were first made by someone in Arkansas, which is the current state I am visiting on my Tracy Tastes America food tour. I found this recipe on the site, Nancy Creative, and love how she modified her recipe a bit from the one she found on Allrecipes.com. I don’t know Nancy but I lover her all ready! She added more bacon to this dish and I think that is what makes these beans so addictive. I ate an entire bowlful last night and my kids went back for seconds and thirds. Even my dog Vinny was circulating the kitchen like a hungry shark in hopes of getting a bite.
You can put this masterpiece together in about 10-15 minutes and while it bakes for 40 minutes, you can enjoy the magnificent scent of bacon in your kitchen. All you need are 5 cans of green beans (I am going to use fresh the next time), a pack of bacon, soy sauce, melted butter, brown sugar and garlic powder. Simply place the 5 cans of beans (drained) in a 9×13 baking dish, cook the bacon just enough so that it is not crispy, slice the bacon into bite size pieces and add it to the dish of beans. Combine melted butter with the soy sauce, brown sugar and garlic powder, the add to the beans and toss evenly so that everything is coated. Bake at 350 for about 40 minutes and voila! These green beans will pair well with so many things like ham, chicken, steak and more.

- 5 (15-ounce) cans green beans, drained (note: you can substitute a similar amount of frozen green beans, about 4 (12-ounce) bags, thawed, or you can use fresh green beans, too)
- 12 slices bacon
- 2/3 cup brown sugar
- 1/4 cup butter, melted
- 7 teaspoons soy sauce
- 1 1/2 teaspoons garlic powder
- Preheat oven to 350 degrees. Place the drained green beans in a 9×13″ baking pan. Cook bacon in a frying pan on your stove top or in a microwave on a microwave-safe plate until bacon strips are cooked enough to chop into large pieces (they should be done, but not real crispy). Sprinkle the bacon pieces on top of the green beans. Combine the brown sugar, melted butter, soy sauce, and garlic powder in a small bowl. Pour this mixture over the green beans and bacon. Bake uncovered at 350 degrees for 40 minutes. Remove from oven and serve.
