Hey everyone! So I know I have not been blogging much, if at all, as of late and I am glad to be back. I have been working on some other projects which have taken up all of my time. Now that December is here, I am anxious to get back into the kitchen and I can’t think of a better way than with Envy Apples. If you are not familiar with these gorgeous additions to your produce section, let me fill you in.
Just one look and you can see how gorgeous they are. The first time I spotted Envy Apples was at my local Publix about a year ago. The name intrigued me and I just had to buy some. I took them home and enjoyed them with almond butter before a long run. After that, I was hooked!
Why are Envy Apples so different? Well, first let me share that they were born using natural plant-breeding methods , crossing Braeburn with Royal Gala Apples. The result was pure gold and now Envy Apples are being produced in fine growing regions such as Washington State and New Zealand.
Last week I received a case of these beauties and wanted to share one of my favorite holiday cocktail recipes. I have been making my Cinnamon Apple Holiday Mule for years and it is always a big hit at parties. This fun twist on the Moscow Mule is made with vodka (I prefer Tito’s), ginger beer, homemade apple cinnamon syrup and a candied ginger garnish. Easy to make and always a crowd pleaser, you will want to share this with your friends.
This cocktail is super refreshing and the addition of the apple cinnamon syrup gives it a holiday twist.
Moscow Mules have long been a favorite of mine and over the years I have created several different recipes. This one is a favorite of mine and can be enjoyed from November through Valentine’s Day.
Cinnamon Apple Holiday Mule
For the Apple Cinnamon Syrup:
- 1 Envy Apple, cored and chopped
- 1/2 cup sugar
- 1/2 cup water
- 1 TBS cinnamon
For the mule:
- 1.5 oz Vodka of your choice (I prefer Tito’s)
- 1 tsp apple cinnamon syrup
- 1 can of ginger beer
- candied ginger and apple slice for a garnish (I like to grill my apple slices)
Prepare the apple cinnamon syrup:
In a sauce pan, combine the sugar, water and cinnamon over high heat. Bring to a boil, reduce to simmer and add apple pieces. Stir to combine and let simmer for 20 min.
Let cool and remove apple pieces (they are great to eat or add over ice cream). Pour syrup into a container and set aside.
For the mule:
In a copper mug filled with ice, add vodka and apple cinnamon syrup. Gently stir to combine flavors. Fill mug with ginger beer and garnish with candied ginger and an apple slice. Serve and enjoy! (save remaining syrup for more beverages by keeping in an air-tight container such as a mason jar. Cheers!
